What does “germinated” mean in Bärkeim mueslis?

All of the seeds in our sprouted muesli (except for the ground tiger nuts and the peeled hemp seeds) are sprouted. To do this, the seeds are soaked in water, which initiates the germination process.

After the seeds have absorbed water, the so-called “germination metabolism” is stimulated. Enzyme inhibitors dissolve in the grain and important enzymes are activated. The seeds are then dried, thus stopping the germination process and making the seeds shelf-stable again.

Sprouts and seedlings are real nutrient bombs ;-)

Plants are in the “prime of their life” especially in the germination stage and are bursting with vitality! At no other time is the plant as rich in vitamins, enzymes and minerals as in the germination stage! :-)

Why can't I see the radicle?

Sometimes - if you look closely - you can see the radicle :-)

We germinate the seeds in a complex process for 3-4 days.

When freshly germinated, the seeds usually look different than they do after gentle drying at 37 degrees. During the drying process, they become smaller, harder, darker and sometimes lose the light, tender sprouts that have formed up to that point. However, this is not a disadvantage, because our goal in sprouting is to maximize the nutrient content and significantly increase the bioavailability of the seeds. The sprout itself makes this possible through its growth, but the nutrients are located in the whole grain, not just in the sprout. So sprouting for 3-4 days is absolutely sufficient to get the maximum bioavailability and nutrient richness. If you germinate some seeds for much longer, this is not necessarily a good thing. For example, if pumpkin seeds are germinated for too long, they develop unpleasant bitter substances and spoil. We have adapted our germination process precisely to each individual seed so that we know exactly when to stop the germination process and start the drying process. With hard-shelled seeds, such as hemp and brown millet, we use a very long soaking time to break open the shell and give the first growth spurt to the sprout (still half inside). We use drying to significantly extend the very short shelf life of fresh sprouts. Unfortunately, we sometimes can't see clearly that the seed has germinated well after drying, but we notice it clearly in the strong change in taste, the consistency when chewing and the effect on our digestion.
