Can sprouts be eaten raw?

In principle, most sprouts can be eaten raw, but there are exceptions. The advantage is that raw sprouts contain not only vitamins and minerals, but also enzymes. Since enzymes are proteins, they would be destroyed by heating. Vitamin C is also not heat-stable.

Which sprouts can be eaten raw and which cannot?

Since most sprouts can be eaten raw, the question that should be asked is which sprouts are best heated. Sprouted seeds, oilseeds and pseudocereals can be eaten raw, while sprouts from legumes should be heated.

The most popular sprouts for raw consumption include:

  • buckwheat sprouts

  • alfalfa sprouts

  • mung bean sprouts

  • quinoa sprouts

  • sunflower seed sprouts

  • broccoli sprouts

  • cress

Why can't you eat legume sprouts raw?

Legumes contain large amounts of lectins. These can lead to severe digestive problems and stomach pain. Legumes cause problems for many people. One of the most harmless problems is probably the well-known flatulence.

Soaking, sprouting and cooking legumes is the best way to get rid of lectins. High heating/cooking is an essential step. The cooking water should definitely be thrown away.

Sprouts – spicy & sweet

Sprouts can be integrated into any meal.

How about a sprouted muesli in the morning? Buckwheat sprouts go great in your porridge. Don't forget the dates ;-)

Sprouted amaranth tastes delicious and nutty in almond yoghurt with date syrup, nuts and fruit.

For date energy balls, you can mix 100 g of grated nuts, 100 g of dates and 3 tablespoons of sprouted buckwheat into a mixture and form balls from it.

Sprouts also taste great in a curry or in your vegetable stir-fry. Buckwheat sprouts, mung bean sprouts or quinoa sprouts are particularly suitable for this.

Broccoli sprouts and cress have a spicy taste. It's best to use them in moderation in your salad.

Preserving sprouts

It is of course very practical to have fresh sprouts available anytime and anywhere. Sprouts can be preserved very easily. To do this, place them in a dehydrator (or in the sun) at 40 °C until they are dry. This takes about eight to twelve hours. Sprouts that have not yet developed green cotyledons are best for drying.
